Makes a great gift during the holidays!
Ingredients
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Grated rind of one orange
1 1/2 cups sliced cranberries (fresh or frozen)
1/2 cup chopped pecans or walnuts
1/4 cup butter
1 cup granulated sugar
1 large egg
3/4 cup orange juice
Glaze: 1/4 cup cointreau and powdered sugar to desired consistency

Instructions
Prep: Preheat oven to 350°F (175°C). Grease a 9×5×3-inch pan and set aside.
Dry Ingredients: In a medium bowl, combine flour, baking powder, baking soda, and salt. Stir in orange rind, cranberries, and nuts. Set aside.
Wet Ingredients: In a large bowl, cream butter, sugar, and egg with an electric mixer until smooth. Blend in orange juice. Stir in the flour mixture, stirring until just combined.
Bake: Spoon into the prepared pan and bake for 1 hour, or until a wooden pick inserted in the center comes out clean.
Cool: Let stand for 10 minutes before removing from the pan. Cool on a wire rack. Wrap tightly to store.
