Ingredients:
3 roma tomatos, diced
2 ripe avocados, diced
1/3 cup red onion, diced
1 15 oz can black beans, rinsed and drained
1 15 oz can black eyed peas, rinsed and drained
1-1/2 cups fresh sweet corn, cob removed
1 red bell pepper
1 jalapeno pepper, seeds and membrane removed, chopped
1/3 cup Cilantro
Dressing:
1/3 cup olive oil
2 Tbsp fresh lime juice
2 Tbsp red wine vinegar
1 tsp sugar
1/2 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder
Tortilla chips for serving
Directions:
Combine top 9 ingredients (not dressing) in a large bowl. In a separate bowl, whisk together dressing ingredients.
Pour dressing over other ingredients and stir well.
Refrigerate well before serving with tortilla chips.
