Veal Stuffed Manicotti

Ingredients:

8 manicotti shells
1/4 cup butter or margarine
3/4 cup very finely grated onion
1 pound twice-ground veal or pork
2 teaspoons basil
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated Parmesan cheese
2/3 cup fresh white bread crumbs
2 eggs, lightly beaten
3 cups tomato sauce

Grated Parmesan cheese

Directions:

Cook manicotti shells following directions on package; drain thoroughly.
Melt butter in frypan; sauté onion until wilted.
Add veal or pork; cook, stirring until lightly browned.
Add basil, nutmeg, salt, pepper, Parmesan cheese, bread crumbs, eggs; mix well.

Fill manicotti shells as directed.

Makes 4 servings.
